85mm Copper herb cleaver | Handmade Kitchen Knives

This is one of our first Cu-Mai blades, It is made up of three layers of steel with pure copper between. The ruby red ghost patina is only visible from some angles in certain light, its just a hint of vibrant ruby red colour along the copper. The blade shape of this one is suited to small chopping boards ideal for fresh herbs, cocktail bar fruit or cheese boards, sure to draw conversation at any gathering.

The blade has a hard, food-safe wax finish to help preserve the colouring and remove the need for oiling during daily use. The handle can be removed for repairs and maintenance and with an heirloom fit, it should last a lifetime. 80crv2 is a tough steel so you don’t have to be too worried about chipping it despite the thin edge. Like most carbon steels, it is easy to sharpen and keep a hair-popping edge.
