Lighter in colour than cassia, it has a delicate, citrusy-sweet flavour and a fragrant aroma that lifts a dish without overpowering it. What is the difference between Ceylon and cassia cinnamon? Ceylon (Cinnamomum verum) is delicate, citrusy-sweet and naturally very low in coumarin — the usual choice for people who use cinnamon every day.
