Why should I rinse quinoa before cooking?
Quinoa carries a natural saponin coating that tastes bitter. Rinse it in a fine sieve under cold running water until the water runs clear before cooking.
How should I cook it?
Simmer gently in water or stock until the grains turn translucent and the white germ ring shows, then rest off the heat and fork through. Season lightly – this is a grain worth tasting on its own terms.
